“Silver Bells” Herb Roasted Chateau Potatoes

Crispy around the edges and buttery rich, one of my favourite potato dishes.

Ingredients

8 tablespoons butter

2 pounds potatoes, peeled and cut into small ovals

1 tablespoon fresh parsley, finely chopped

3/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

Method

Preheat oven to 400F. Melt butter in a large oven-friendly skillet (cast iron is best) over medium-high heat. Sauté the sliced potatoes in the butter for 5 minutes 5 Minutes, turning over and seasoning with salt/pepper. Place the skillet into the oven and roast the potatoes until golden brown and tender, gently stirring and turning potatoes over every 5 minutes 5 Minutes, for 20 minutes. Remove the skillet from the oven and garnish with parsley.

Prep Time: 15 minutes
Cook Time: 25 minutes
