  • ½ cup shelled pistachio nuts
  • ¾ cup dried bread crumbs
  • 4 boneless, skinless chicken breast halves
  • 1/2 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • ½ chipotle pepper* in adobo sauce, plus ¼ teaspoon adobo sauce to taste
  • ½ cup mayonnaise
  • ½ teaspoon fresh lime juice

  • 4 skinless, boneless chicken breast halves
  • 1/4 teaspoon salt
