  • 2 large sweet potatoes, peeled and thinly sliced (par-boiled)

  • 1 large Spanish onion, chopped
  • 2 stalks celery, chopped
  • 4 cups organic chicken stock
  • 1 teaspoon dried thyme (or 2 teaspoons fresh)
  • 1/2 teaspoon dried sage (or 1 teaspoon fresh, chopped)
  • Sea salt and freshly ground black pepper, to taste
  • 2 ears of fresh corn on the cob (or 1 tin of peaches and cream corn)
