Quarterback Fully Loaded Bacon Stuffed Potato Skins with Sour Cream ‘n Chive Dip (and of course a side of apple sauce)

  • 8 (3-inch-long) Russet potatoes (about 2 1/4 pounds), scrubbed and thoroughly dried
  • 2 tablespoons unsalted butter, melted
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups shredded cheddar cheese (I use half sharp cheddar and half mozzarella)
  • 8 strips bacon, cooked until crispy, and crumbled
  • 1 cup sour cream
  • 2 tablespoons finely chopped fresh chives
  • Applesauce (if you prefer for dipping)

Fullback Finger Lickin’ Baked BBQ Wings with Blue Cheese Dip (a ‘must’ at a Super Bowl party)

  • 2 pounds chicken wings
  • Olive oil, for drizzling

Superbowl BBQ Wing Spice Blend

  • 2 tablespoons coriander seeds
  • 2 tablespoons cumin seeds
  • 2 tablespoons black peppercorns
  • 2 tablespoons paprika
  • ½ tablespoon dried basil
  • ½ tablespoon dried oregano
  • 2 tablspoons kosher or sea salt
  • ½ -1 teaspoon cayenne pepper (your call)
  • 2 tablespoons finely ground coffee (pick your favourite)

Dipping Sauce

  • 2/3 cup sour cream
  • 1/2 cup crumbled blue cheese, such as Roquefort or Danish blue
  • 2 tablespoons spring onions, finely chopped
  • 1 tablespoon fresh lemon juice

Tight End Manly Grilled Portobello Mushroom ‘Burgers

  • 4-5 Portobello mushrooms, washed
  • 4 yellow Spanish onions, sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons sugar
  • ½ cup mayonnaise
  • 2-3 tablespoons sweet chili sauce
  • 2 cups Gouda or cheddar cheese grated
  • 1 bunch romaine lettuce, finely shredded
  • 8 small dinner rolls (or 24-inch whole grain baguette, sliced into 8 equal portions)

Wide Receiver Pistachio Crusted Chicken Tenders with Chipotle Mayo

  • ½ cup shelled pistachio nuts
  • ¾ cup dried bread crumbs (or panko bread crumbs if you prefer)
  • 4 boneless, skinless chicken breast halves (or chicken tenders – approx. 32 ounces each – wing it, pun intended)
  • 1/2 tablespoon extra virgin olive oil
  • 1 tablespoon freshly squeezed lime juice
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • Chipotle Mayo Dipping Sauce:
  • ½ chipotle pepper* in adobo sauce, plus ¼ teaspoon adobo sauce (to taste – yep, it’s very spicy)
  • ½ cup mayonnaise
  • ½ teaspoon freshly squeezed lime juice

Linebacker Grilled Chicken or Beef Beer Kebobs

  • 3-4 pounds boneless, skinless chicken breasts or beef (Sirloin is a good cut for kebobs or chose your favourite cut)
  • 3⁄4 cup beer (your favourite)
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard powder
  • 1 tablespoon honey
