BEGIN: “To Serve With Love” Smoked Salmon Mousse Pate

  • 8 ounces smoked salmon
  • 1 1/2 cups cottage cheese
  • 3 tablespoons vodka (3 for you, 3 for the recipe)!
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon prepared horseradish
  • ½ teaspoon freshly cracked black pepper
  • Cucumber, sliced
  • Rice crackers
  • Fresh dill sprigs for garnish

FOLLOW: “If You Wanted the Moon” Mediterranean Roasted Pork Tenderloin with Fruit Chutney

  • 1 1/2 cups sweet cherries, pitted and chopped (dried cherries will work as well)
  • 1/3 cup finely chopped Spanish onion
  • 1/3 cup sugar, raw if you have it
  • 1/3 cup apple cider vinegar
  • 1 tablespoon minced fresh ginger
  • 1 1/2 teaspoons yellow mustard seed
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon coarsely ground black pepper
  • 1 1/3 cups chopped tomatoes or cherry tomatoes
  • 2 pork tenderloins, 1 pound each, trimmed of fat

  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey

  • 1 cup uncooked quinoa
  • 2 cups organic less-sodium chicken broth
  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon sherry cooking vinegar
  • ¼ teaspoon sea salt
  • ½ cup cherry tomatoes, quartered
  • ½ cup thinly sliced arugula or boston lettuce
  • ½ cup chopped red pepper
  • ½ cup chopped English cucumber
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped pitted kalamata olives

  • 1 red apple, cored and chopped
  • 1 Granny Smith apple, cored and chopped

  • 1 stalk celery, finely chopped…for crunch
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1 cup Greek yogurt
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons sugar, raw if you have it
