3 branches of rosemary

1 lb new potatoes (don’t peel)

3 tbsp olive oil

½ tbsp dried rosemary crushed (in your hands)

¼ tsp paprika

½ tsp sea salt

freshly ground black pepper

Preheat oven to 450, quarter potatoes unless they are baby potatoes. Arrange rosemary on the bottom of the baking sheet if using fresh rosemary branches. Place potatoes in bowl, add olive oil to coat, sprinkle with sea salt and freshly ground black pepper, add a dash of paprika and dried rosemary and mix well. Place potatoes on baking tray over fresh rosemary and bake for 20-25 minutes. These potatoes are flavourful as they absorb the essence of fresh rosemary.
