Summertime in a salad, this taste of fresh summer fruit is definitely delicious and definitely feel good!
4 tomatoes, cut into 1 inch chunks
4 ripe peaches, finely diced
½ cup cilantro, coarsely chopped
¼ cup coconut oil
2 tablespoon apple cider vinegar or your favourite vinegar
2 teaspoon raw, unpasteurized honey
½ teaspoon Himalayan sea salt, freshly ground black pepper, to taste
Black sesame seeds (white or brown are OK too)
A splash of love
Slice fruit and place into large bowl. Mix in cilantro.
Whisk dressing ingredients together in a small bowl and drizzle over fruit. Mix well and serve chilled. Garnish with sesame seeds.
