Counting Sheep Warm Banana Bread with Banana Butter.

This banana bread is truly a healthy, guilt-free treat. Bananas contain the natural muscle-relaxants magnesium/potassium for a relaxing sleep. Ahhh.

 3 ripe bananas, mashed (freeze ripe bananas beforehand so that they're extra moist once defrosted)
 2/3 cup unsweetened organic applesauce
 2 eggs
 1 teaspoon pure vanilla extract
 ½ cup filtered water
 2 cups organic almond flour
 1 teaspoon baking soda
 2 teaspoons baking powder
 ½ teaspoon cinnamon
 Pinch ginger
Banana butter.
 6 tablespoons unsalted grass fed butter, at room temperature (or non-dairy alternative)
 1 very ripe banana, sliced
 ½ teaspoon fresh lemon juice
 Pinch Himalayan sea salt
 Sprinkle Cinnamon (I prefer True Cinnamon)
 A splash of love

Preheat oven to 325 F/165 C. Defrost bananas fully then mash until they are mostly lump-free. With a hand mixer, beat together the banana, applesauce, eggs, vanilla, and water until creamy.

In a separate bowl, sift the flour, baking soda, baking powder and spices.

Gradually add the dry mixture to the wet ingredients, beating well. Pour the batter into a gently oiled and floured baking dish and spread evenly.

Bake for 45 minutes 45 Minutes or until a toothpick is inserted and comes out clean. Cool completely on wire rack before slicing.

Make Banana Butter in your food processor. Puree the butter, banana, lemon juice and salt. Sprinkle with cinnamon and serve slathered banana bread. Enjoy just one slice before bed...don't overdo it! Nighty night!
