Bananas in Coconut Milk

 3 or 4 ripe bananas
 1 cup coconut milk
 1 teaspoon vanilla (or pandanus leaf if you want ‘authentic’)
 2 tablespoons brown sugar (or firm palm sugar if want ‘authentic’)
 Pinch of sea salt, to taste

Boil bananas in water in a large, flat frying pan for 2 minutes 2 Minutes until skins turn dark and start to break. Gently remove from pan, peel and cut into 4 pieces each.

Rinse and reuse the same frying pan. Pour coconut milk into pan, bring to a boil. Add bananas, vanilla, sugar, salt and boil 3 minutes 3 Minutes. Don’t over boil or the oil will start to separate out from the coconut milk and the bananas will be too soft, they should be slightly hard. No comment…
