Preheat your oven to 350 F/175 C. Empty the chickpeas into a colander and rinse them well under cold water. Pat the chickpeas dry with a paper towel. Put chickpeas in a bowl, add 1 tablespoon of olive oil and your favourite spices. The spices you select are entirely up to you and your taste-buds, chose from salt, pepper, cumin, paprika, smoked paprika, allspice, cayenne pepper, cinnamon, garlic…sky’s the limit! Toss the chickpeas and spices until chickpeas are well-coated and place in a single layer on your baking sheet. Roast the chickpeas in the oven for 40-50 minutes 40 Minutes or until the chickpeas have reached your favourite crunch! They should be slightly brown and crispy. Serve them cool or warm. Nighty night!
Combine chickpeas and tahini in a food processor or blender and process until chickpeas are finely ground.
Smash the garlic cloves with the side of a large knife. Trim the ends and discard the peel. Heat 2 tablespoons of the oil in a small skillet over medium heat. Add the garlic and stir until fragrant and golden, 1 to 2 minutes 1 Minutes. Remove from the heat and add the cumin; stir until toasted, about 5 seconds. Quickly stir in the remaining 2 tablespoons of oil and scrape the mixture into the processor; process until incorporated. Add the lemon juice and salt and process until the mixture is fluffy and smooth, approx. 2 to 3 minutes. If the mixture is too firm, add more lemon juice or water, blend until you reach your desired consistency. Dust lightly with cumin and serve chilled or at room temperature with rice crackers (not too many though)! PS. For a colourful twist, add roasted red peppers or sundried tomatoes! Nighty night!
