Savour every single bite of this light, fruity, bubbly baked streusel-topped fruit crisp.
Preheat oven to 375 F/190 C. In a large bowl, mix fruit with sugar, cornstarch, zest, juice, and salt.
Transfer fruit mixture to a large 8 X 8” baking dish.
Pulse flour, sugar, salt, ¾ cup oats, flax seed in a food processor to blend. Pulse in butter until no dry spots remain. Transfer to a bowl and work in remaining ¼ cup oats with your fingers.
Scatter oat topping over fruit, place on a baking sheet, and bake until fruit juices are bubbling and topping is golden brown, approx. 60 minutes 60 Minutes. Transfer to a wire rack and let cool 1 hour 60 Minutes.
