Beautiful You Chilled Watermelon Gazpacho Shot!
Great for hydration! Cool off this summer with one of my favourite chilled ‘soup’ shots. Gazpacho is a classic Spanish soup made of seasonal fruits and vegetables and served cold. Think of it as eating a fresh salad that’s been blended for you to drink. Watermelon, sooo good for you with its high-water content, soluble fiber, and vitamin C! Cheers!!
Process watermelon, cucumber, onion, jalapeño, lime juice and mint in a blender until smooth. Stir in vinegar and salt. Chill well before serving, at least 1 hour and up to 1 day. To serve, pour about 2 ounces of the gazpacho into shot glasses and garnish with a lime slice. Ole!
For another interesting twist on watermelon, try a little freshly squeezed lime juice on your bite-sized watermelon then top with a little pinch of coarse Celtic or smoked sea salt for flavour lifting magic or to spice up your fruit, dip into your favourite chili spice (Spanish smoked paprika or chipotle chili powder) for some heat!
