Well-built Chocolate Mint Sunflower Seed Energy Bombs
These bombs of energy pack an energy punch and they're yummy! Oh and they're a snap to make, always on the ready.

10 large dates pitted (soak in hot water to soften, then drain)
1 cup sunflower seeds
1 tablespoon chia seeds
1/4 cup raw cacao powder
¼ teaspoon pure peppermint extract or food-grade essential oil, more if you LOVE mint
½ cup pumpkin seed protein powder*
2 tablespoons raw, unpasteurized honey
1 1/2 teaspoon cinnamon
1/4 teaspoon Himalayan sea salt
4-6 tablespoons coconut or almond milk or your favourite milk (add more if mixture is dry)!

Drain dates and finely dice. Add all ingredients to a large bowl, mix well.

Form 1-inch balls and place on a baking sheet. Cover and freeze for one hour before eating! Store in the fridge or freezer and enjoy!

*DIY Pumpkin Seed Protein Powder: Fill your coffee or spice grinder halfway with raw, uncooked pumpkin seeds (washed and dried). Grind seeds until they have a consistency like that of all-purpose flour for about 5 seconds at a time.
