Boost DIY Elderflower Lime Cordial.
Cordial, in the European meaning of the word, is a sweet concentrated syrup that is diluted and then mixed either with still or carbonated water. Elderflower cordial is simply that - an elderflower syrup that can be added to the drink of your choice for a sweet, fragrant beverage. This has a zing to it from the lime, but the aroma is all elderflower. It is a delicate scent, slightly floral, very sweet and just a bit spicy. Elderflower is said to help boost your immune system, aid with swollen sinuses (sinusitis), colds, influenza (flu), bronchitis, diabetes, constipation, as well as a diuretic (increase urine volume).
Finely zest and juice one lime, slice the other lime. Add the honey, zest from one lime, and water to a saucepan. Gently heat until the honey is melted.
Remove from heat and add the elderflowers, lime juice from 1 lime, and lime slices from the other lime. Stir well, allow to cool and steep in refrigerator for 12-24 hours (the longer the better for more intense flavour).
Remove the lime slices and strain the elderflowers through a fine strainer (or a coffee filter).
Store in a sealed jar in the refrigerator for up to one month.
To serve, pour 1 to 3 tablespoons of the syrup into a 2-cup drinking glass over ice and add still or carbonated water. Or you can add a tablespoon to a glass of sparkling wine or add it to hot water to make an elderflower lime tea! Mmmm.
