Extra Garlic Caesar Salad

This is a unique ‘take’ on Caesar salad, enjoy!

Dressing:
 2 cloves of garlic (add more for more effect)
 1/2 tablespoon minced fresh ginger
 1 bunch cilantro
 ¼ teaspoon ground cumin
 ¼ teaspoon sea salt
 ¼ teaspoon freshly ground pepper
 1/4 cup fresh lime juice
 1/2 teaspoon white wine vinegar
 ½ tablespoon honey
 ¼ cup parmesan cheese
 ¼ + 1/8 cup extra virgin olive oil
Salad:
 3 cups mixed greens
 1 shredded grilled chicken breast (pre-made Rotisserie chicken from grocery stores is perfect for this)
 ¼ cup corn kernels (fresh or frozen)
 ½ tin black beans, rinsed well and drained
 1 red pepper, diced
 2 tomatoes, chopped
 ½ cup shredded Cheddar cheese
Garnish:
 ¼ cup toasted tortilla strips (slice about 1/4 inch and then lightly toast on a baking sheet in your oven)

Place garlic, ginger in food processor and mince well. Add the cilantro and process until finely chopped. Add in the spices, lime juice, vinegar, honey and parmesan cheese, mix. With the food processor running, slowly pour the oil through the ‘feed tube’, let process one more minute 1 Minute so that the oil is emulsified into the dressing. Assemble salad ingredients in a large salad bowl, pour dressing over top and mix well.

Garnish with tortilla strips and good luck getting your message across the table! The 'X' tortilla garnish means 'no go'! Or maybe it should be a heart instead as you just may reconsider...ya never know!

Note: The magic ratio of oil to vinegar is 3 to 1 for the perfect vinaigrette!
