Ginger and turmeric both contain magical medicinal uses. Ginger is a great anti-nausea spice. Turmeric is a wonderful natural anti-inflammatory spice. And everyone knows that chicken (noodle) rice soup is good for everyone’s soul. This soup is the culinary form of a warm hug that we all need when we’re sick with a cold or flu!
Yields 1 Serving Servings Quarter (0.25 Servings) Half (0.5 Servings) Default (1 Serving) Double (2 Servings) Triple (3 Servings)
2 cups long-grain brown basmati rice (much healthier than white rice)
2 large cooked chicken breasts, cooked and cubed (vegan version, replace chicken with chick peas)
6 cups chicken broth (vegan version, replace with vegetable broth)
2 cups water
3 large carrots, sliced
3 celery stalks, sliced
1 yellow onion, diced
1 ½ - inch piece ginger, peeled and grated
1 tablespoon turmeric powder
1 teaspoon Himalayan sea salt, to taste
Freshly ground black pepper, to taste
Garnish.
Lemon juice
Handful cilantro, coarsely chopped
A splash of love
1 Prepare rice according to rice preparation instructions.
2 In a large saucepan stir together broth, water, carrots, celery, onion, ginger, turmeric, salt and pepper.
3 Bring to boil, uncovered for 10 minutes 10 Minutes or until vegetables begin to soften.
4 Reduce heat to low and stir in cooked chicken and rice.
5 Taste and adjust seasoning. Garnish with a good squeeze of fresh lemon juice and cilantro. Enjoy this delicious comforting soup!!
