 1 ½ pounds red fingerling potatoes, cut into small cubes (or use red potatoes)
 3 garlic cloves, minced
 4 tablespoons olive oil
 ¾ teaspoon kosher salt
 1 teaspoon freshly ground pepper
 1 tablespoon chopped fresh rosemary (or ½ tablespoon dry)
 4 shallots, thinly sliced
 2 teaspoons minced fresh chives, for garnish

Preheat oven to 400° F.

Combine the first 7 ingredients in a large bowl and toss well to coat. Arrange potato mixture on a parchment paper covered baking sheet.

Roast until potatoes are browned and tender for 15 to 20 minutes 15 Minutes. Turn potatoes after about 10 minutes 10 Minutes . Remove from oven, garnish with chives and serve.
