Salad:
 4 cups mixed baby lettuce greens
 1/2 cup bean or alfalfa sprouts
 1 cup dried fruit – cranberries or apricots, chopped
 1 cup tomato wedges or cherry tomatoes
 1 cup peeled, sliced cucumber
 1 cup shredded carrots
 1/4 cup finely diced red pepper
 1/2 cup chopped radishes
 1 tablespoon sesame seeds, toasted
Sesame Vinaigrette:
 1/4 cup freshly squeezed orange juice
 1/4 cup apple cider or rice vinegar
 2 tablespoons soy sauce or tamari
 1 tablespoon toasted sesame oil
 1 tablespoon honey
 2 teaspoons fresh ginger, finely grated
 Pinch sea salt
Make Vinaigrette:

Whisk orange juice, vinegar, soy sauce, oil, honey, ginger and salt in a small bowl until all ingredients are well-blended. Refrigerate.

Make Salad:

Toss lettuce, sprouts, dried fruit, tomato, cucumber, carrots, red pepper and radishes in a large bowl with the dressing until the salad is well-coated.

Lightly toast sesame seeds on stovetop in a small skillet. Allow to cool and garnish salad.
