Smooth Move Kale Avocado Hemp Heart Superfood Buddha Bowl.

Kale is extremely high in vitamin C & the ‘top’ green leafy vegetable, the nutrients it contains support healthy skin, hair, and bones and the fiber content enhances digestion and contributes to cardiovascular health. Avocado, despite its creamy texture, is actually high in fiber. Eating foods with natural fiber can help maintain a healthy digestive tract!

 1 large head of kale, finely chopped (pick your favourite type of kale)
 1/8 teaspoon lemon zest + juice of 1 lemon
 1 teaspoon Himalayan sea salt, or to taste
 Freshly ground black pepper
 3-4 tablespoons organic olive oil or coconut oil
 1-2 ripe avocados (depending on size)
 ½ cup cherry tomatoes, halved
 1 cup artichoke hearts, chopped
 1/4 cup tinned organic lentils, rinsed & drained (or make DIY dried chickpeas from scratch)
 1/3 cup hemp hearts
 Chia seeds, soaked for 1 hour
 A splash of love

De-stem and chop kale into small pieces and put into salad bowl. Squeeze the juice of 1 lemon over kale, add zest, salt, pepper, oil and avocado and massage gently.

Add cherry tomatoes, artichoke hearts and lentils to salad, gently folding to mix well.

Garnish with hemp hearts, chia seeds and love.
