“Lady in Red” Savoury Stuffed Sweet Potatoes

 4 large sweet potatoes
 ½ cup plain organic yogurt
 ½ teaspoon sea salt
 ½ teaspoon freshly ground black pepper
 3 green spring onions, thinly sliced (or a handful of chives)
 1/3 cup Black Forest ham
 2 tablespoons freshly grated Parmigiano-Reggiano Parmesan cheese or grated Cheddar (pick your favourite)!

Scrub potatoes until shiny clean & prick several times with a fork. Bake on baking sheet in 400 F (200 C) oven for about 1 hour and 15 minutes 60 Minutes or until tender; let cool slightly.

Slit potatoes lengthwise down the middle. Holding with a clean tea towel, scoop out the inside of the potato into a bowl, leaving about a ¼ inch layer inside each potato skin.

Mash with yogurt, salt/pepper until smooth and stir in onions and ham. Spoon back into the potato skins and sprinkle cheese on top. Return to baking sheet, bake for about 15 minutes 15 Minutes or until steaming hot & cheese is melted.
