Tranquilizing Matcha Green Tea Coconut Rice.

This is a delicious rice has an unusual healthy twist - matcha! Matcha teas are excellent sources of the anti-inflammatory polyphenol EGCG, which may reduce inflammation and other inflammation-driven chronic conditions. A great healthy addition to rice!

 2 cups brown long-grain rice
 2 cups vegetable stock
 2 cups coconut milk
 1 teaspoon Himalayan sea salt
 1/3 cup shredded coconut
 1-2 teaspoons Matcha green tea powder, to taste
 A splash of love

Rinse rice twice, set aside. Bring stock, coconut milk, sea salt and coconut to a gentle boil in a heavy saucepan. Pour some of the liquid into a separate bowl, cool slightly. Measure out Matcha and whisk in until smooth, without any clumps. Add whisked Matcha mixture to the saucepan and place over high heat, stirring together. Once the liquids and Matcha have integrated well and have come to a boil, add the rinsed rice and stir. Bring to a quick boil, then cover the saucepan and turn down the heat.

Simmer for 45-55 minutes 45 Minutes on low heat. Once finished, let stand for a few minutes and fluff. Sprinkle with a slight dusting of Matcha for an impressive green garnish!
