Optimism Rainbow Five Grain & Legume Curried Salad.
This salad is absolutely delicious with a subtle curry flavour blended with delicious grains, legumes! It’s chock full of optimism!
1 ½ cups cooked brown rice (1/2 cup uncooked rice)
1 cup cooked quinoa (1/3 cup uncooked quinoa)
1 can (1 cup) organic lentils, rinsed, drained (or make DIY dried lentils from scratch)
1 can (2 cups) organic chickpeas, rinsed, drained (or make DIY dried chickpeas from scratch)
1 can (1 cup) organic black beans, rinsed, drained (or make DIY dried beans from scratch)
½ cup raisins
2 red bell peppers, chopped
1 tablespoon red onion, finely diced
½ cup cilantro, coarsely chopped
Dressing
½ cup extra-virgin olive oil
¼ cup apple cider vinegar
3 teaspoons curry powder
1 teaspoon cumin
Pinch turmeric
2 tablespoons coconut palm sugar, or your favourite sweetner
Himalayan sea salt & freshly ground black pepper

Prepare brown rice and quinoa according to directions. Mix all of the grains, legumes, raisins, vegetables and cilantro together.

Mix dressing ingredients, pour over salad and mix well. You may want to make a little more dressing as the grains may absorb it (and it’s delicious)!
