A Taste of Mexico.Bite-sized baked tortilla pinwheel-style appetizers with roast chicken that are quick and oh so flavourful. These zesty appetizers are delicious and fairly simple to make with few ingredients.

 1 package cream cheese, softened (1 cup standard sized container)
 2 teaspoons ground cumin
 Dash sea salt
 2 cups of diced roasted chicken (Rotisserie chicken from the grocery is perfect for this)!
 ¼ pound Monterrey Jack Cheese (or Edam) grated
 1 tablespoon fresh jalapeno peppers without seeds, finely chopped (or jarred pickled jalapeno peppers)
 3 large tortillas white flour (or whole grain which I prefer)

Preheat your oven to 350 F.

Mix all filling ingredients together.

Lay out 3 tortillas and divide the filling into thirds. Spread filling out evenly with a spatula (or your hands if you prefer hands-on) and tightly roll up the tortillas. Refrigerate 2 hours 120 Minutes (seam side down).

Slice about ½ inch (1.25 cm) and bake on a baking sheet at 350 F for approximately 12 minutes 12 Minutes until nicely browned and cooked through. As simple as that! Que bueno! These are so simple to make yet oh so delish, he'll love 'em.
