“Sleigh Bells Ring” Baked Mushroom Topped Brie

Delicious mushrooms make this Brie sing! I shared this recipe on a local radio program called ‘Quick ‘n Delicious’ that I hosted every week for 3 years.  ½ pound fresh sliced mushrooms
 ½ cup coarsely chopped onions
 ¼ cup finely chopped walnuts (or your favourite crunchy nut)
 1 large garlic clove, finely chopped
 ½ teaspoon each dried thyme, rosemary & freshly ground black pepper
 1 tablespoon extra virgin olive oil
 1 tablespoon balsamic vinegar
 1 200g wheel cold brie cheese
 2 tablespoon finely minced fresh parsley or chives

Chop onions, nuts and garlic.

Heat oil in large skillet over medium heat; add mushrooms, onions, nuts, garlic, thyme, rosemary & pepper. Cook and stir mushroom mixture for 5-7 minutes or until all liquid has evaporated.

Stir in vinegar and cook 1-2 minutes. Remove from heat and cool to room temperature.

At baking time place brie on oven-proof serving plate or baking pan. Spoon the mushroom mixture evenly on top of brie.

Bake in a 350 F/180 C oven for about 8-10 minutes or until cheese is beginning to melt.

Garnish with parsley or chives. Serve with a thinly sliced whole wheat baguette or crackers.
