“Some People Do Spend Their Whole Lives Together” Roasted Salmon with Lemon Coriander Rub

Here’s the rub! Make the rub once - double or triple the recipe and enjoy two or three or however many more times you like! It’s the recipe that keeps on giving. Keep the rub in the fridge and you’re ready to rub for the next romantic interlude!

 1pound (1/2 kg) Side fresh salmon with the bones removed (you can replace salmon with chicken if you prefer)
 1 tablespoon extra virgin olive oil
 ½ tablespoon paprika
 ½ tablespoon zested lemon peel
 ½ tablespoon finely crushed coriander seeds (you can also use ground coriander seed if you don’t have whole seeds to crush)
 ½ tablespoon raw sugar (if you have it)
 ¼ tablespoon sea salt
 ½ teaspoon freshly ground black pepper
 Pinch of cayenne pepper
 Lemon and parsley for garnish

In a small bowl combine paprika, lemon zest, coriander, sugar, salt, pepper and cayenne.

Line a large baking sheet with parchment paper (this is purely for easy clean up) or start the BBQ. Rub fish with olive oil.

Massage the ‘rub’ into the surface of the fish.

Roast in a preheated 425 F (210C) oven for 20 minutes or until fish is just cooked through or place on the BBQ.

Transfer fish to a serving platter, and garnish with lemon and parsley.
