Super Sloppy Joes

This comfort food is loved by everyone and anyone. This recipe also makes a fabulous meat sauce to serve over pasta or as taco filling – quick, delicious & versatile. Make more than you need and freeze it for next time.

Yields1 Serving
 2 tablespoons extra virgin olive oil
 1 onion, coarsely chopped
 2 teaspoons cloves garlic, finely chopped (dry is fine too, ½ amount)
 1 celery stalk, chopped
 1 pound extra-lean ground beef or chicken
 1 cup tomato sauce
 1 cup milk
 1 tablespoon Worcestershire sauce
 1 teaspoon yellow prepared mustard (or Dijon if you prefer)
 1 tablespoon brown sugar
 2 teaspoons chilli powder
 ½ teaspoon cumin
 ¼ teaspoon oregano
 ¼ teaspoon sea salt
 ½ teaspoon freshly ground black pepper

Heat oil in a large skillet, add onion, garlic and celery. Cook 4-5 minutes or until tender & fragrant.

Add ground beef, break up meat and cook until meat is browned. Drain off any fat.

Add tomato sauce, milk, Worcestershire sauce, mustard, brown sugar and seasonings. Simmer uncovered over medium heat for about 10 minutes or until sauce is thick.

For a healthier option add vegetables of your choice when the sauce is simmering – peppers, spinach or ever frozen vegetables.

Serve over English muffins (whole wheat for the healthier option) or toasted rolls or even hamburger buns!
