Tranquilizing Szechuan Cole Slaw.
This healthy salad takes minimal time, lasts up to a week in your fridge and and gets better each day that it sits in this divine dressing.
Cole Slaw.
1 cup green cabbage, shredded
1 cup carrot, finely chopped
½ cup beets, shredded
1 avocado, cubed
Dressing.
½ cup natural peanut butter
2 tablespoons of Tamari (GF soy sauce) or soy sauce
½ teaspoon lemon juice
1 tablespoon maple syrup
1 tablespoon sesame seed oil
2 minced garlic cloves
1 teaspoon fresh grated ginger
Pinch turmeric
Himalayan sea salt and freshly ground black pepper, to taste
Garnish.
Organic peanuts, coarsely chopped
Cilantro, coarsely chopped
Sesame and hemp seeds, liberally sprinkled

Prepare cole slaw ingredients. Blend dressing ingredients together and shake well in a mason jar. Drizzle the dressing overtop of the cole slaw, toss and mix well. Garnish with peanuts, fresh cilantro and seeds. Enjoy!
