Greek cuisine follows the Mediterranean diet, studies have found that the well-balanced Mediterranean diet can be key to living a long and healthy life. Buddha Bowls are all the rage right now, a big bowl of plant-based goodness that offers a completely balanced meal & customized to your liking!

Create-Your-Own Buddha Bowl Base:
 1 cup cooked long-grain brown rice
 1 can organic lentils, rinsed, drained (or make DIY dried lentils from scratch)
 1 can organic chickpeas (or make DIY dried chickpeas from scratch)
Toppings.
 Spinach, coarsely chopped
 Red pepper, cubed
 Avocado, cubed
 Cherry tomatoes, halved
 Sweet potatoes, diced and roasted
 Carrots, finely diced
 Cucumber, diced
 Olives, sliced
 Grapes, sliced in half
Greek Lemon Tahini Dressing
 4 tablespoons sesame tahini
 4 tablespoons extra virgin olive oil
 6 tablespoons water
 6-8 tablespoon lemon juice, to taste
 1 teaspoon onion powder
 2 teaspoons oregano
 4 teaspoons coconut palm sugar (or your favourite sweetner), to taste
 4 teaspoons apple cider vinegar
 1 teaspoon Himalayan sea salt
Garnish.
 Cilantro & parsley, coarsely chopped
 Sesame Seeds
 A splash of love

Prepare rice, lentils, chickpeas according to directions. Prepare other vegetable & fruit toppings.

Greek Lemon Tahini Dressing.

Combine ingredients together in a bowl and whisk until smooth. Keep covered and refrigerated. Keeps 5-7 days.

Buddha Bowl Serving.

Divide brown rice, lentils, chickpeas into 6 bowls. Top with toppings to create a ‘taste’ of Greece.
