Rapture Taste of Peru Lime Salsa.
A delicious refreshing salsa to serve as a salad or a side dish! I learnt how to make this healthy salsa dish at a hands-on cooking class when I was in Lima, Peru, so its truly authentic!
Salsa:
1 cucumber cubed into small pieces
1 large tomato, finely diced
½ red onion, finely sliced (and marinated in lime juice for 30 minutes)
1 red pepper, finely diced
½ green pepper, finely diced
1 avocado, finely diced
1 cup cilantro, coarsely chopped
Dressing:
Lime juice of 2 limes
2 tablespoons coconut oil
Sweetener, to taste (I used coconut palm sugar)
Pinch Himalayan pink sea salt, to taste
Freshly ground black pepper, to taste
A splash of love

Prepare all salsa ingredients and place into a medium-sized bowl.

Mix dressing ingredients together and whisk in a small bowl or shake in a small mason jar.

Drizzle dressing over salsa, mix well and chill 20 minutes 20 Minutes before serving!
