SuperCharged Tex Mex Jicima Salad.

Jicima is not well-known nor is it easy to pronounce the name, jicama (HEE-Kah-mah). It’s a root vegetable native to central and South America and has been eaten for thousands of years for its taste and health benefits. Jicama is similar to a potato or a pear in terms of consistency and colour, it tastes something like a savoury apple and has a delicious crunch. Research has shown that the health benefits include its ability to increase energy levels, help you manage weight, optimize digestion, boost the immune system, reduce the risk of cancer, manage diabetes, and build strong bones. Jicama also helps increase circulation, lower blood pressure levels, and boost brain function.

 Cucumber, cubed
 Tomato, coarsely chopped
 Handful cilantro, coarsely chopped
 Dry roasted peanuts, coarsely chopped
 Himalayan Sea Salt, to taste
 Lime Juice, freshly squeezed
 Garnish.
 Manchego cheese, grated (substitute with Parmesan or a non-dairy alternative)

Prepare ingredients, place into a large serving bowl. You choose the portions depending on your appetite and taste-buds!! Sprinkle with sea salt and lime juice. Stir to mix well and garnish with Manchego. Once jicama is cut or sliced, refrigerate your leftover jicima in a plastic bag up to 2 weeks. Stay Charged!
