A splash of vodka gives this healthy salmon spread a sophisticated flair….why not, pourquoi pas?
Cut half of the salmon into large chunks. Finely dice the remaining salmon into about 1 cm (1/4 inch) pieces. Place cottage cheese in a fine-mesh sieve and press on it to remove excess moisture. Transfer the cottage cheese to a food processor. Add half the salmon chunks, vodka, lemon juice, mustard and horseradish. Process until smooth. Transfer the mixture to a bowl and fold in the finely diced salmon. Refrigerate until chilled.
Place salmon pate on cucumber rounds or rice crackers & place sprigs of dill on top!
