“You Deserve Better” Warm Broccoli with Caramelized Shallots in a Lemon Garlic Dressing

Warm Broccoli with Caramelized Shallots:
 3 tablespoons walnuts, coarsely chopped
 2 tablespoons extra-virgin olive oil
 1 1/2 cup sliced shallots, thinly sliced (approx. 6 large shallots)
 Sea Salt & freshly ground black pepper, to taste
 6 cups broccoli, cut into florets
Lemon, Garlic Dressing:
 2 1/2 tablespoons extra-virgin olive oil
 1 tablespoon fresh lemon juice
 1 clove garlic, minced
 1/2 teaspoon finely grated lemon zest
 1/2 teaspoon sea salt
 1/4 teaspoon freshly ground black pepper
 1/4 teaspoon dry mustard
Warm Broccoli with Caramelized Shallots:

In a large skillet over medium heat, toast walnuts until lightly browned and fragrant, about 5 minutes 5 Minutes. Set aside.

Add oil to the same skillet and heat over medium-low heat. Add shallots and cook, stirring often, to a deep golden brown, about 10 minutes 10 Minutes. Season with salt and pepper; set aside in the skillet.

Meanwhile, steam broccoli until just tender, 3 to 5 minutes 3 Minutes. Keep 1 teaspoon each of the shallots and walnuts aside for garnish. Add broccoli and walnuts to the shallots in the skillet and toss to combine. Taste and adjust seasonings.

Lemon, Garlic Dressing:

Whisk all ingredients together in a small bowl, taste and add salt and pepper to taste.

Pour over the broccoli, stir and serve warm.

Garnish with walnuts and shallots.
