Tranquilizing Carrot-Herb Sauerkraut.

With the healthy addition of carrots & herbs adding really nice flavours too. Love your sauerkraut, you can dress it up and take it out!

  • Yields: Serves 6

Ingredients

1 cup packed well-fermented sauerkraut (my favourite brand is Bubbies)

2 tablespoons brine from sauerkraut

3 large carrots, finely chopped

1/2 cup fresh parsley or cilantro, finely chopped

1 teaspoon fresh ginger, minced

Pinch turmeric

Himalayan sea salt, to taste

Apple cider vinegar, to taste

A splash of love

Method

In a small bowl, combine the sauerkraut, brine, shredded carrots, herbs and ginger. Season with salt to taste. Add apple cider vinegar, to taste, for more tang! Enjoy!
