Tenacious Chocolate Spice Coconut Energy Bites.

An easy, homemade healthy dessert or snack that will give you energy to follow your dreams!

Ingredients

½ cup coconut oil

½ cup raw cacao powder

Pinch cardamom & cinnamon

¼ cup maple syrup or raw, unpasteurized honey, to taste

½ cup coconut butter, melted (coconut ‘flesh’ ground into a spreadable paste)

A splash of love

Method

Line a mini muffin tin with mini muffin liners and set aside.

In a double boiler, melt coconut oil. Add raw cacao powder, spices, sweetener and mix until fully combined.

Pour ½ tablespoon into the bottom of each muffin liner. Place in the freezer to firm up.

Once firm, add 1 tsp coconut butter to each bite, freeze once again.

Once firm, top with the remaining chocolate, ½ tablespoon per cup and freeze until firm. Bites should be kept frozen. For a smooth and creamy consistency, allow thawing slightly at room temperature.
