SafeSpace Fresh Artichokes with Double-Dip Vinaigrette.

An Italian study found that artichokes retain high levels of antioxidants when cooked. Artichokes are said to be excellent to help protect your health and counter the effects of radiation. Oh, and some people drink the water from the cooked artichokes - I know because I worked for a famous actress who always did (and she's the picture of health)!

Ingredients

2 organic artichokes

2 tablespoons white vinegar

1 teaspoon Himalayan sea salt

Vinaigrette.

5 tablespoons extra virgin olive oil

3 tablespoons apple cider vinegar

2 teaspoons Dijon mustard

Pinch Turmeric

Himalayan sea salt, freshly ground black pepper, to taste

Method

To prepare artichokes soak them in warm water with white vinegar for 10 minutes 10 Minutes. Rinse with fresh water.

Place in a large saucepan or dutch oven with salt and cover artichokes with water. Cook over medium heat for about 40 minutes 40 Minutes until artichokes’ leaves can be removed easily. Drain and leave to cool. Serve cold with the vinaigrette dressing.

Vinaigrette.

Mix all ingredients in a mixing bowl, double dip your artichokes and enjoy every single bite!
