Ginger and turmeric both contain magical medicinal uses. Ginger is a great anti-nausea spice. Turmeric is a wonderful natural anti-inflammatory spice. And everyone knows that chicken (noodle) rice soup is good for everyone’s soul. This soup is the culinary form of a warm hug that we all need when we’re sick with a cold or flu!

- Yields: Serves 6
Ingredients
2 cups long-grain brown basmati rice (much healthier than white rice)
2 large cooked chicken breasts, cooked and cubed (vegan version, replace chicken with chick peas)
6 cups chicken broth (vegan version, replace with vegetable broth)
1 ½ - inch piece ginger, peeled and grated
1 teaspoon Himalayan sea salt, to taste
Freshly ground black pepper, to taste
Method
Prepare rice according to rice preparation instructions.
In a large saucepan stir together broth, water, carrots, celery, onion, ginger, turmeric, salt and pepper.
Bring to boil, uncovered for 10 minutes 10 Minutes or until vegetables begin to soften.
Reduce heat to low and stir in cooked chicken and rice.
Taste and adjust seasoning. Garnish with a good squeeze of fresh lemon juice and cilantro. Enjoy this delicious comforting soup!!
