Electrify Almond Butter Maca Chocolate Energy Cookies.

Feel the energy as you bite into each soft, chewy, delicious superfood cookie! Ground from an adaptogenic root, maca powder is a superfood that can boost energy, relieve stress, and yes, even improve libido! Maca is an adaptogen, a special class of herbs that help the body regulate natural metabolism and create balance in the body. They also help raise resistance to physical, chemical, and biological stressors, maca is capable of responding to stress in anyway the body needs, it balances stress hormones such as cortisol

Ingredients

1 cup almond butter

1/3 cup unpasteurized, raw honey

1 egg

1 tablespoon vanilla

½ teaspoon Himalayan sea salt

½ teaspoon baking soda

¼ teaspoon baking powder

1 tablespoon raw cacao powder

1 tablespoon gelatinized maca root powder (Found at fine health food stores. I prefer gelatinized maca, the starches have been removed, plus I love the sweet butterscotch taste)

2/3 cup shredded, unsweetened coconut

½ cup dark chocolate (70% cocoa or greater), broken into small pieces

Method

Preheat oven to 350 F/175 C. Place parchment paper on baking sheets.

Stir together first 8 ingredients, mix well. Make sure honey is fully incorporated, add coconut, chocolate and mix until well combined. The ‘dough’ will have a very soft consistency to it, so it’s best to scoop with a cookie scoop or small ice cream scoop onto baking sheet. Dough will spread out and flatten as cookies bake, so leave space between each cookie!

Bake 9-12 minutes 9 Minutes or until lightly browned. Enjoy your bites of energy!
