SuperCharged SuperPowered Berry Salad.

This delicious Berry Salad has a unique spin to it with the sweetened pickled onion, which adds a nice depth to the flavour. This recipe is inspired by the Medical Medium's delicious recipe.

Ingredients

Salad.

Romaine or bibb lettuce, torn into bite-sized pieces

¼ cup fresh basil, coarsely chopped

¼ cup fresh mint, coarsely chopped

½ cup strawberries, fresh, sliced

½ cup wild blueberries, fresh

¼ cup cherries fresh, halved

1 avocado, cubed

Pickled Sweet Onion.

½ lime, zest and juice

¼ cup red onion, very thinly sliced into rounds, rinsed

Pinch coconut palm sugar

Himalayan sea salt

Berry Dressing

1 tablespoon coconut oil

1 tablespoon apple cider vinegar

1 cup fresh raspberries

Himalayan sea salt and freshly ground black pepper, to taste

Garnish.

Walnuts

Method

Salad.

Prepare salad ingredients.

Prepare pickled sweet onion: Finely grate zest from ½ a lime into a small bowl, squeeze juice into bowl (approx. 1 tbsp). Add red onion, sugar, and a large pinch of salt and toss, squeezing onion with your hands to help it soften quickly. Marinate 20 minutes 20 Minutes and drain. The onion is incredibly sweet and perfect for this salad.

Dressing.

Place all ingredients into a blender and blend well, add salt and pepper to taste. Chill.

Assemble Salad.

Place lettuce on a large platter, sprinkle with herbs, followed by fruit and avocado. Place sweet onion on top and drizzle with dressing. Garnish with walnuts.
