Clarity Chickpea Spinach Salad with Cumin Yogurt Orange Dressing.

This unusual salad is deliciously flavourful with a refreshing orange essence flavour - your taste buds will love you!

Salad Base:

4 cups mixed salad greens or baby spinach leaves, roughly chopped


4 cups canned organic chickpeas, drained, rinsed (or make DIY dried chickpeas from scratch)

¼ cup parsley, coarsely chopped

1/8 cup red onion, finely chopped

Cumin Dressing:

¼ cup coconut oil

3 tablespoons fresh lemon juice

1-2 teaspoons lemon zest, to taste

1 ½ teaspoons ground cumin

1/8 teaspoon cayenne pepper

Pinch turmeric

Himalayan sea salt and pepper, to taste

Yogurt Orange Essence Dressing:

1/3 cup organic plain yogurt (or non-dairy option)

¼ teaspoon orange zest

2 tablespoons fresh orange juice

½ teaspoon raw, unpasteurized honey

Splash of orange essence (optional, but highly recommended for its amazing flavour)


2 tablespoons coarsely chopped fresh mint leaves

Hemp hearts

A splash of love


In a medium bowl combine the chickpeas, parsley and onion.

In a small bowl whisk together the oil, lemon juice, zest, cumin, cayenne pepper, salt and pepper. Pour the dressing over the chickpea mixture and toss to combine. In a small bowl, blend together yogurt, orange zest, orange juice, honey and orange essence.

Serve the chickpea salad over a bed of spinach leaves. Top with the yogurt dressing and garnish with mint and hemp hearts.
