This Quinoa Salad is a delicious blend of fresh healthy ingredients with unique flavours of goodness. Make it and love yourself!

- Yields: Serves 6 SuperWomen
Ingredients
4 medium-sized cooked beets, diced
4 tablespoons pomegranate seeds
1 medium-sized kale, deveined, finely chopped
1 cup wild blueberries, fresh or frozen
¼ crumbled feta cheese (or non-dairy)
Dressing.
Himalayan sea salt and freshly ground black pepper
Garnish.
Method
Place quinoa in a large bowl; cover with water. Let stand 5 minutes; rinse well, drain. Bring 4 cups of water to a boil in a large saucepan; stir in quinoa. Cover, reduce heat, and simmer 15 minutes 15 Minutes or until liquid is absorbed. Uncover; fluff with a fork. allow to cool.
Prepare other ingredients, add to quinoa, mix well.
Blend dressing, pour over melange and mix well. Garnish and enjoy your superpowers!
