This salad is so delicious, an interesting, co-mingling of flavours and everything is oh so fresh! I was inspired by an Epicurous recipe to create my own version of freshly farmed goodness!

This coconut green tea iced latte is a powerhouse drink, it fills you with energy and keeps you satisfied for ages! Matcha is a special type of powdered green tea that is grown and produced in Japan. The matcha green tea leaves are shade-grown for the last few weeks of their growth phase which makes leaves produce more chlorophyll giving the matcha this amazing recognizable green hue. During this phase, the plant produces more L-Theanine – that has a somewhat similar effect in our body as caffeine – minus the nervous energy. After harvesting, leaves are carefully ground to produce a fine powder – Matcha. Matcha is then used to brew an antioxidant-rich frothy green tea. Unlike other types of teas, matcha is not strained out before consuming. You are consuming the entire leaf which makes matcha very potent. Matcha green tea contains a powerful arsenal of vitamins and minerals but also a unique, strong antioxidant.
