Trouble Sleeping? Maybe your bedtime snack needs an overhaul? Here are some Bedtime Snacks to Help You Sleep.

Ingredients

Counting Sheep Crunchy Roasted Chickpea Bedtime Snack (design your own). {GF/DF/V}

1 can (2 cups) organic chickpeas, rinsed, drained (or make DIY dried chickpeas from scratch)

1 tablespoon extra virgin olive oil

Spices, your choice of spice (listed below) and amount of spice!

A splash of love

Counting Sheep Golden Hummus Dip. {GF/DF/V}

1 can (2 cups) organic chickpeas, rinsed, drained (or make DIY dried chickpeas from scratch)

3 tablespoons sesame tahini

2 cloves garlic (I like to poach my garlic, simmering until fork-tender)

¼ cup extra-virgin olive oil

¼ teaspoon ground cumin

1 ½ tablespoons fresh lemon juice

1 teaspoon Himalayan sea salt

A splash of love

Counting Sheep Almond Butter Midnight Dip. {GF/DF/V}

If you ever need a midnight dip, have this one prepared in advance!

4 tablespoons coconut flakes, toasted

½ cup almond butter

½ banana

1 tablespoon carob powder

Pinch nutmeg & cinnamon

Rice-cakes

Counting Sheep Pumpkin Spice, Carob and Seed Bites. {GF/DF/V}

A completely satisfying and delicious bedtime snack, a bite of comfort. It won’t be easy to stop at one though!

3 ¼ cups whole rolled oats, organic, GF

1 cup pumpkin puree, tinned

1 cup pumpkin seed butter

½ cup maple syrup

½ cup chia seeds

½ cup carob chips (better than chocolate chips for sleep)

1 teaspoon cinnamon

½ teaspoon nutmeg

¼ teaspoon cloves

½ tablespoon vanilla

2 tablespoon carob powder

¼ teaspoon Himalayan sea salt

Method

Counting Sheep Crunchy Roasted Chickpea Bedtime

Preheat your oven to 350 F/175 C. Empty the chickpeas into a colander and rinse them well under cold water. Pat the chickpeas dry with a paper towel. Put chickpeas in a bowl, add 1 tablespoon of olive oil and your favourite spices. The spices you select are entirely up to you and your taste-buds, chose from salt, pepper, cumin, paprika, smoked paprika, allspice, cayenne pepper, cinnamon, garlic…sky’s the limit! Toss the chickpeas and spices until chickpeas are well-coated and place in a single layer on your baking sheet. Roast the chickpeas in the oven for 40-50 minutes 40 Minutes or until the chickpeas have reached your favourite crunch! They should be slightly brown and crispy. Serve them cool or warm. Nighty night!

Counting Sheep Golden Hummus Dip.

Combine chickpeas and tahini in a food processor or blender and process until chickpeas are finely ground.

Smash the garlic cloves with the side of a large knife. Trim the ends and discard the peel. Heat 2 tablespoons of the oil in a small skillet over medium heat. Add the garlic and stir until fragrant and golden, 1 to 2 minutes 1 Minutes. Remove from the heat and add the cumin; stir until toasted, about 5 seconds. Quickly stir in the remaining 2 tablespoons of oil and scrape the mixture into the processor; process until incorporated. Add the lemon juice and salt and process until the mixture is fluffy and smooth, approx. 2 to 3 minutes. If the mixture is too firm, add more lemon juice or water, blend until you reach your desired consistency. Dust lightly with cumin and serve chilled or at room temperature with rice crackers (not too many though)! PS. For a colourful twist, add roasted red peppers or sundried tomatoes! Nighty night!

Counting Sheep Almond Butter Midnight Dip.

Blend ingredients together until smooth, slather on rice-cakes and nighty night!

Counting Sheep Pumpkin Spice, Carob and Seed Bites.

Prep Time 20 Minutes 20 Minutes. Add all ingredients to a large bowl, mix well. Form 1-inch balls and place on a baking sheet. Cover and freeze for one hour before eating! Store in the fridge or freezer. Nighty night!
