
Optimism Rainbow Watermelon, Papaya, Fresh Herb, Black Olive Salad.

For a bowl of optimism, sink your teeth into this vibrant salad and you’ll feel amazing! This hydrating salad is delicious, sweet, savoury and refreshing all at the same time!

Ingredients
1 small red onion, fine half-moons
1 large watermelon (sweet and ripe), 1½ inch chunks
1 small papaya (sweet and ripe), 1½ inch chunks
1 bunch fresh parsley, coarsely chopped
1 bunch fresh mint, coarsely chopped
4 tablespoons extra-virgin olive oil
½ cup pitted deep purple Kalamata olives, sliced in half
Freshly ground black pepper, to taste
Method
Slice onion into very fine half-moons and place in small bowl to marinate with lime juice - brings out transparent pinkness and diminishes bitterness.
Remove the rind and seeds from the watermelon and papaya, and cut into chunks. Mix watermelon, onions, herbs, olive oil, olives and pepper together in a large bowl.
Add marinated onions and lime juice, gently stir to combine. Garnish with crumbled feta and parsley on top of the salad. Enjoy!
